OR, if you’re feeling something classic, pay homage to the birthplace of this wine with a charcuterie of Crottin de Chavignol (soft-ripened goat cheese) and some Jambon d’Auvergne (cured pork hind leg) from around the corner in the Rhone Valley.Thomas-Labaille has vines averaging thirty years old with some much older on the famously steep slope of Monts Damns in Chavignol.
