This 100% Fiano is one of those wines we can drink fresh and just crush on…but, if you bought an extra few bottles and set them down-Cellar, we anticipate a new level of complexity and depth after 4-5 years. Notes of green apple and graphite and seashells and tart citrus, we love this paired with pan-seared black bass, cut summer vegetables, and a barely cooked tomato salsa. The distinct minerality comes from this vineyards unusually high elevation. A treat!
