This batch was made with 100% capn agaves- Bicuixe capn -two year, and Espadn capn -one year.Approximately 900kg of two-year capn wild Bicuixe plants and nearly equal weight of one-year capn Espadn were harvested in the days surrounding the full moon of late September 2021, and crafted into 200L of a sweet, savory, and complex batch typical of the region.Pops of melon skin and orchard fruit seamlessly slide into bright sweet finish with a burst of minerality.
