Description
Located in the Los Altos (Highlands) of Jalisco, Gran Dovejo produces only single-estate tequilas. The agave plants are grown by a fifth-generation agave grower. The pias, or hearts of agave, are harvested by hand and then roasted in clay ovens for 36 hours. The pias are then shredded, the juices extracted and fermented and then double distilled in copper alembic stills.
The Aejo is aged for an average of 2 years in ex-bourbon barrels. Aromas of toasted oak, butterscotch, rich vanilla, and cinnamon spice greet you, leading to a full palate of vanilla, clove, nutmeg, cooked agave, anise, and black pepper. Bottled at 40% abv.
