Description
A brother and sister team run this brewery which has been producing sake since 1804. They are pioneers in the use of Omachi rice and using ancient Bodaimoto technique of brewing. the sake that they produce are rich and rustic.
Round and expressive with an excellent balance of sweetness, acidity & umami enhanced by a fat and juicy texture, New Mountain has ripe & rounded flavours of green banana, guava, brown sugar, yoghurt & sweet steamed rice. A beautifully long finish tapers off into spicey, fruity sweetness.
This sake can be heated to around 50 degrees or drunk cold from the fridge. When drunk cold it pairs extremely well with fried foods and Indian curry. Warm it up and the umami flavours released mean it pairs great with creamy foods such as burrata.
