Description
A brother and sister team run this brewery which has been producing sake since 1804. They are pioneers in the use of Omachi rice and using ancient Bodaimoto technique of brewing. the sake that they produce are rich and rustic.
This sake is a Junmai sake brewed using Omachi rice, Kyokai Kabo 1401 yeast and it is unfiltered (muroka), unpasteurised (nama) and undiluted (genshu). they’ve also brewed it using the medieval Bodaimoto method.
As it’s unpasteurised it needs to be kept refridgerated.
It’s an expressive, medium bodied sake with plenty of juicy fruit flavours with an undertone of nuttiness. It has depth and a dryness to it.
Pairs really well wiith spicy Mexican food, BBQ shortribs or game.
