Description
This wine is made from 100% Palomino. We would pair this with a Gambas al ajillo, a sauted shrimp dish deglazed with sherry. Palomino is usually a common grape used to make Jerez or Sherry, a sweet dessert wine made with dried grapes from the south of Spain. This wine however, is a dry table wine, with tons of bright acidity over honeyed apricot and quince fruit notes. The wine is extremely delicate and mineral, due to the chalky soils it grows on as well as the exposure to the Atlantic Ocean.
