The Bees Kees is a Prohibition-era cocktail featuring gin, lemon juice and honey. The unique name is a convention of the time: The phrase bees knees was popular slang used to call something excellent or outstanding. Made with Barr Hill’s excellent Gin, the honey notes are even more lush and pronounced.
Barr Hill Gin from Caledonia Spirits (founded in Vermont by a beekeeper) uses pure grain spirits as a base to showcase juniper berry and raw honey. Added just before bottling, the honey imparts unique floral qualities that vary with season and blossom. For only two botanicals, it’s a surprisingly complex sipper. A sweeter gin, perfect for a Bees Knees or a squeeze of lemon.
