To earn the distinction aejo, tequilas must aged for a minimum of one year, and most aejo tequilas are aged for only that long. Avin Aejo Tequila, however, is aged for two years (twice the requirement), and as a result has a rich amber color along with an aroma of burnt agaves, peaches and persimmon.
