From Maestro Mezcalero Ral Garcia, this batch is made entirely of the wild agave varietal known as Mexicano. Mexicano agave spirits tend to have rich,complex flavors – savory, sweet, vegetal, and fruity, and this batch is a prime example of that profile. This is a Mezcal for the bold, with big aromas and flavors. One of the firstsensations we noticed was a lovely duality of sweet and savory aromas: fresh cutpoblano pepper, barbecue sauce, melon skin, and a bright resounding ripe pineapplenote. The first sip blasts off with intense flashes of spice and smoke enveloped by ablanket of sweet candy-like agave. After the initial flash of intensity, minerality settlesacross the palate with a lingering note of smoke. A slightly tannic and herbal finishaccentuates the green peppercorn and draws you in for another sip.After sitting in the glass a fewminutes a second visit offers layers of tropical fruits like mango and pineapple as acounterpoint to more savory hints of leather and dark cocoa. The finish of sweetsmoke, volcanic rock, and green pepper leaves the lips tingling. This Mexicano batchlends its self to parings including grapefruit slices, crisp jicama with fresh lime and chili,dark cocoa, and the perennial favorite – corn chips and salsa!
