First aged for 18 Months in white oak barrels the ‘Cristal’ is then filtered through charcoal to soften any intensity. Fruity and sweet on the nose, this Cristalino is also Soft, lush, and fruity on the palate a note of vanilla reminds you this has spent a bit of time in a barrel despite the crystal clear color. Luxurious, supple, and smooth.
For every San Matias bottling, from the most elevated to those meant for everyday enjoyment, the agave are roasted at 194F over a full 48 hour period. Like any BBQ fan will tell you, slow and low produces the most tender and succulent roasts.
