Vinified from 100% Pinot Noir grapes this wine has a beautiful rose colour from the gentle whole bunch pressing of the grapes. 44 months of ageing on the leeslead to a complex extra brut fizz. A fine persistent mousse and autolytic flavours give hints of red fruits, brioche and white chocolate. A well balanced acidity make this wine perfect for creamy risotto, scallops, or carbonara.
