This wine is made of 100% Rossese. Briny, herbaceous, and a touch of bacon fat on the nose makes this wine from the Italian Riviera stand out. Known as Tibouren across the border in France, it is light bodied, delicate, and enjoyable under a warm setting sun. The vineyards in Dolceacqua were constructed by the Romans on impossibly steep cliffs and are bathed by the Mediterranean warmth, and are tended by the very young Lorenzo, who started making his own wines at 18. Thanks to the wine’s tenderness, you may pair it with meatier fish stews, and shellfish pastas, in addition to lighter, gamey meats. This wine is a dream on a cliff overlooking the sea.
