Description
This wine is 100% Xarel-lo planted between 1956 and 1974, on very calcareous soil. 1/3 of the juice is direct pressed and aged in used French oak, 1/3 of it is pressed into clay amphora, and 1/3 sees a 14-day skin contact and is aged in stainless steel. The resulting blend is a balance between texture, vibrant fruit, and a bit fuller structure due to the skin contact. Pair it with pan fried garlic shrimp and some toasted sourdough.
